As GPS tracking systems are usually quite specialised, and developed towards the needs of the client, this entirely depends on what supplier you work with.

As BlueSky donates a bit to OSM, I assume they also work with OSM.

This depends on what system you are using. If you have a Garmin device you can convert OSM data to the garmin format and use that. If you have a tablet or a TomTom you can use Navit. Other devices may be possible.
