When adding details to a local shop that's a branch for a larger company, what contact details should be used?

Obviously if the local shop has its own phone number, email address, etc., we should add those.

But what if there is no dedicated phone or email for the local shop, only the corporate/national phone/email? Should we add those to the local shop so there are at least some contact details? Or leave them out altogether?

We usually reserve the contact links for methods of contacting the particular shop. So yes, leave them empty if you only know the brand's central contact methods.
