This is a follow up to surface=pavings-stones with surface:middle=grass. But what is the width in this case 2.15 or twice 0.73 ? Or both ? with the grass part to complete the distance ?

I'm guessing the question is about a highway=track, perhaps tracktype=grade3 (see e.g. https://wiki.openstreetmap.org/wiki/File:Tracktype-collage.jpg and imagine that the grade3 one there has paving stones in the wheel tracks).

I'm guessing that the question might be "should I tag the width of the road as the size of vehicle that can pass (the total width) or the paved width (a smaller value)?".

In this example I'm guessing that the width of each track is 0.73m and the total width of the road is 2.15m

correct, the question remains the way width 2,15 or the value of the lanes 0.73 m ?
