How do we manage to draw a bridge over water ? Many of them are just between the borders of the water bodies of a stream or canal. Which IMHO is wrong, there is a kind of construction on the river banks that supports the bridge. Would or could not it be better to draw this construction as well ? Otherwise the bridge could just drop down into the water is not it ?

I suggest you user your own judgement. You cannot do a lot wrong.

Personally, I usually draw the bridge part of the highway or rail (bridge=yes) only along the stretch that is not connected to solid ground. The actual structure (man_made=bridge) can be bigger of course and comprise all supporting elements.

Last year we discussed https://wiki.openstreetmap.org/wiki/Talk:Tag:man_made=bridge#Extent_of_bridge --- From the example screenshots I thought it is interpreted as for the main span between expansion joints. This is more visible to trace, and a more verifiable definition to follow.

Support structures have bridge:support=abutment, and bridge:support=pier.
