I'm not sure how to mark a building that was once had a particular industrial use, but is now used as a cafe. It is part of a set of old colliery buildings which are open for guided tours, so it's really all three of dynamo house, museum and cafe.

Tag each building with building=industrial. The building=* tag should describe the edifice itself, not its current use, so this is appropriate even for disused industrial buildings.

For the cafe, easiest to just add it as a node inside the appropriate building. If the cafe occupies an entire building, and there are not distinct names for the building and the cafe, you might prefer to add the cafe tags directly on the building itself.

Similarly for the museum -- although I could also imagine it might consist of multiple buildings and perhaps outdoor space, in which case it would need its own polygon or multipolygon.
