I uploaded Nordic trails 2 years ago, however currently cannot access them except through Map Data. They are listed with tags of Piste: Type Nordic. They are in the Craftsbury Outdoor Center, Vermont system. I'd like to be able to see or access them under the Relation Category (e.g. Relation: Nordic Craftsbury). Can anyone tell me if OSM only posts trails that are used in the current season (e.g. MTB trails in summer and Nordic trails in winter)? I'm not really clear how this works and why I can't access the Nordic trails in the same way the MTB trails show up?

Different maps show different things. Here is some of your data in OpenStreetMap (but as you say, none of the renderings there show it) but here it is visible in OpenSkiMap, and here in OpenSnowMap.

Also on waymarkedtrails here: https://slopes.waymarkedtrails.org/#?map=15!44.6774!-72.3578 (may be useful as you can quickly switch from the "slopes" view to the "mtb" view of the same area if you want to compare the mapping).
