I am trying to generate images that would look something like this - https://en.wikipedia.org/wiki/Wikipedia:Blank_maps#/media/File:North_america98.svg

I read a few wiki articles and installed Maperitive, but I am confused. Is this something that can be done with OSM?

The problem is that OSM data is very detailed. Even if you filtered the world coastlines from OSM it would still be too much data to load into Maperitive. You will probably be better off by selecting a few layers from naturalearthdata.com and loading them into QGIS.
