Detached from question extract POIs for a region referring to Roland's answer.

Roland, This answer helped me a lot! But, as I'm very very new OSM, I have a deal question: Where can I find all attributes of: " <has-kv k="tourism" v="hotel"/>" I suppose it's some where in the deep dungeons of the documentation, but I can't find it. A bit of help would be much appreciated. Thanks in advance. Jan

Are you looking for additional attributes that come along hotels? Then have a look at the hotels wike page for some documented tag and taginfo to findactually used combinations.

Or are you just looking how all kinds of POIs are generally tagged? Then browse the wiki.You could start with amenity, tourism and leisure.
