Hi,

I am trying to download the Adelaide Hills area (South Australia) from OSM but I don't know how it works. I need the Adelaide Hills area to work with it in QGIS.

Anyone who can help me out?

Thanks in advance!

It's easier to use Overpass-turbo and accept Geojson output. I would recommend a series of thematic layer downloads (e.g., highways, water etc).

Alternatively download pre-built shapefiles for Australia from Geofabrik Downloads. You'll need to clip them to your area of interest. BBBike may also be suitable for your purposes as it provides similar shapefiles to those from Geofabrik with custom bounding boxes.
