What is the difference between mapserver and geoserver? Open street map is under which category? Whether QGIS is also map server? I am confused with these terminilogies.

MapServer and GeoServer are two open-source server-side software products, which can be used for managing all sorts of different map data from different sources.

The two projects are completely unrelated to OpenStreetMap.
