In OpenStreetMap a street is usually split whenever there is a change in the properties of the road (name, classification, number of lanes etc.) or when a relation needs to point only to a specific portion (segments with bus routes, turn restrictions etc.).

The main site does not give an easy way to show all parts of a way like this unless they are already part of a relation for some reason but sites like overpass turbo can create more complex queries that might do what you want. For example this link should show all entities associated with "Rue Bellus-Mareilhac" even though it has been split to show the north end as one-way. (This was created using the "Wizard" button at the top.)
