There are signs with instructions on how to draw surrounding elements. Is there a tag (similar to the "Exercise instruction sign" tag) for such signposts?

I don't believe there is such specific tag. I suggest tagging it as usual boards with tourism=information + information=board + something that fits best from board_type=*, e.g. nature or wildlife. You could also introduce board_type=drawing_instructions. Use board:title or name to specify the sign's heading.
