I am a user of OSM, not so far a contributor. I wanted to know if it is possible to create a reduced detail map (e.g. main roads only, no side streets) from OSM data. Specifically I am working for an NGO located in Addis Ababa, Ethiopia and want to create a simplified map on which to locate our organization and then use it as a graphic to embed in a brochure, course materials, and eventually on our new website. Basically the wonderful detail in OSM maps of Addis is too much for my needs, so basically I need to REMOVE detail, not add it. I am willing to try it out myself if there are some tools to assist me (will be a good hands-on learning experience too!). Thanks -- great site and great tool. Once I get to grips with it I will start to add stuff about Ethiopia, promise!

You have at least two possibilities to reach your aim:

Use full OSM raw data and process it with a small local renderer like Maperitive or Mapweaver by configuring the rendering rules there,

or

filter out the raw OSM data before processing with the help of osmfilter or Osmosis, and then do an own rendering with standart rendering rules.

Or: produce with full raw data an SVG image or a file for Adobe Illustrator and delete all unneeded elements via Inkscape or other vector editors.

Or create your own cloudmade style at http://maps.cloudmade.com/. It's very easy to set the zoom level at which particular road types are shown.
