Custom database statistics

Hello, I have seen the following image from here:

Do you know how I can get the same image with only nodes? Can I get the same graphic chart for nodes that have a given tag (for example "shop=tobacco")?

I would like to see how some nodes grow over time.

Very nice! Thank you. Do you know how can I reach the same result only for a specific region? For example if I want to get all nodes with tag "shop=tobacco" only in Italy.
