My neighbors have an unmarked water hole in their yard. I don't know if I'd call it a pond.

Rough coordinates: https://www.openstreetmap.org/#map=19/35.59475/-96.34427

It's not connected to any stream, it's just a big pit in the ground with a small dock. I think there's fish in it somehow. If it's been raining, it'll be higher. If it hasn't, it could be lower. So it's size on the map would change over time.

Is there anything different I should do to mark this on the map, or should I just mark it's size based on the aerial image and call it good?

Use intermittent=yes, and probably also water=pond.

There's no clear guideline on what the geometry should be. When mapping turloughs I usually aim for the max extent during an average year, knowing that the place is dry-ish most of the year but not wanting to map flood years either.
