I was mapping a building, however, most of the building is covered by a tree. I was wondering if I should continue to map it even though I can't see the entirety of the building. In addition, is there an accepted standard to know when I should and shouldn't map a covered building.

You should try to map the floor plan of the building, see wiki. That means you should try to see "through" the trees.
