How do I tag that a route=ferry only operates in the summer months (May, June, July and August)? Should I use opening_hours? Thanks

opening_hours is a good solution, but it's also worth tagging seasonal=yes as a quick heads-up to routers and renderers which may not have a full parser for the crazily complicated opening_hours schema.

The wiki https://taginfo.openstreetmap.org/tags/route=ferry#combinations is silent on the topic and taginfo doesn0t help either https://taginfo.openstreetmap.org/tags/route=ferry#combinations

But I can't see anything wrong or unusual with using opening_hours it jsut seems to not have been done up to now.

Note the opening_hours specification currently doesn't have shorthand for the season so you will need to express it with months.
