Hi,

Here is a square:

http://www.openstreetmap.org/way/364228190#map=19/38.83383/20.70892&layers=D

(edited a few minutes ago, but it's been there since yesterday alright.)

The standard and humanitarian maps doesn't show anything at all there. The cycle and transport maps do show some green, but not the name.

(AFAICS the nearby squares that do show on the map have been declared as parks.)

What am I missing?

The best place to discuss what one particular map style chooses to render is the issues list for that map style. In the case of "place=square on the OSM Carto map" that would be this issue.

According to http://wiki.openstreetmap.org/wiki/Key:highway, squares should be specified as highway=pedestrian and area=yes. The additional place=square is apparently more recent and does not suffice on its own.

When you select square on the ui (at least in the iD editor), it only sets place=square, so you must go add the other two as well.
