Waymarked Trails (overview map here). Pilgrimage ways to Santigao de Compostella are shown with the pilgrims scallop at higher zoom levels. Select a particular route and you can download a GPX file. Note many routes are divided into numerous sections. OSMers have been mapping the various routes fairly intensively for years now, so there are a lot of variants.
