Take a look at https://wiki.openstreetmap.org/wiki/Planet.osm#Country_and_area_extracts for up to date extracts of OSM data. If you are just getting started with raw OSM data, check https://wiki.openstreetmap.org/wiki/Elements to see how things are organized.
