I just registered for OpenStreetMap and am a newcomer, although I have a longstanding interest in maps and mapping.

Could someone advise me whether it is possible to use OSM to plot long-distance sea routes, say from the Panama Canal to various destinations such as the Galapagos, French Polynesia, Samoa, Fiji, Vanuatu, New Guinea? I'd greatly appreciate advice.

Perhaps https://forum.openseamap.org/ is a better place to ask this question. They use the same database as OpenStreetMap, but are focussing on everything related to navigation on water

Sea routes (especially long-distance) are not something fixed. They vary to some extend on weather, traffic, type of vessel, fuel used, etc. It is useful however to map ferry routes. This could help navigation systems used in cars.
