I was trying to edit a street but then I got those red lines sticking to mu cursor and I couldnt get them off. I dont understand how it works properly.

You can click 'Help' in the top right of the online editor, Potlatch 2.

I have to say I dont find help much use, those red squares are doing my head in, once you click on one it's stuck to your cursor.

It's not clear what you mean by "stuck to your cursor".

But I'm guessing that you have clicked on the node (red square) at the start or end of a way. If you do that, Potlatch assumes you want to extend the way, and starts drawing. If you don't, then just double-click or press Enter to finish drawing.
