See MacOS in the OSM wiki. It lists various software for viewing maps, editing, recording GPX tracks and so on. According to your comment you are having problems with downloading maps from garmin.openstreetmap.nl. Could you define what you mean by "maps" here? Are you asking if there's a version of https://switch2osm.org/serving-tiles/manually-building-a-tile-server-14-04/ for macOS? If so, I'm not aware of one, but that doesn't mean that one does not exist.
Most of the tools used are to an extent OS-agnostic - so running them on something that (to me) very much resembles BSD Unix from the 1990s shouldn't be too much of a problem.
If that doesn't work, then an Ubuntu VM under something like Parallels should certainly be possible.
