Sedge Bay in Yellowstone National Park is a canoe launch. Unlike a "leisure=slipway", there isn't a point of contact between a road and a body of water. Rather, there's a parking lot, and a stretch of beach suitable for launching hand-carried watercraft.

How would I go about mapping this?

The mostly used tag seems whitewater=put_in.

If "whitewater" doesn't sound right to you, then there are some other "put_in" tags such as "canoe". See https://taginfo.openstreetmap.org/search?q=put_in#values .

Hi, read these pages and tag it as the Wiki stated, https://wiki.openstreetmap.org/wiki/Tag:sport%3Dcanoe and keep an eye on useful combinations. I would tag the trail with =footway, a canoer will carry all the stuff along a portage. It even could be a path between rivers or lakes, have a look at Alconquin Park or the area around Rideau Lakes.

That wiki article doesn't give any guidance on how to tag the launching point.
