I can export a map to pdf via the share button on openstreetmap.org. However it doesn't export the highlighted route to the pdf. Is there any way to do this?

as far as I know there is no such function on the OSM.org homepage. You could try other routing services which are based on OSM data: https://wiki.openstreetmap.org/wiki/Routing . If you've found one, please mention here.

I'd start by going direct to the routing service that's giving you the route in question. The OSM homepage gives access to a number of routing services - but you don't need to use the homepage to access these.
