I would like to know is there a complete list of tags that can be added to an object (i.e road/park etc) e.g name (or =name).

im still confused but i found the site @ http://wiki.openstreetmap.org/wiki/Map_features

i would like to know how to deselect something (i.e a road) after editing it

If you haven't seen it already, I'd read the Beginners' Guide here. There's a section in there (this one) that should answer some of your questions. As the "Map Features" page says, OpenStreetMap does not have any content restrictions on tags that can be assigned, so you can tag whatever you like, although it makes sense to have people using the same tags for the same things, which is why pages such as "Map Features" exist.

For the answer to your second question (about deselecting a road), it's probably worth having a read of this (the "primer" for the Potlatch 2 editor).
