What are the map symbols for paths, bridleways and byways?

what do you mean by "map symbols"? Please describe what you what do do and for which purpose. That helps to understand.

I presume you're referring to the legend for the "standard" map style.

Unfortunately there isn't a 100% up-to-date map legend anywhere. You can get a bit of an idea on the main map by clicking the "i" at the right-hand side, though some of those are a bit out of date ("highway=unsurfaced" is no longer rendered on the standard map, for example).

Your best bet currently is probably this wiki page. It's also not guaranteed to be up to date but is probably more so than anywhere else.
