I have a POI for which I know the address. Should I create a single node with both, or one node for POI and another node nearby for the address?

One single node with both address and POI should be fine.

Questions like this one often concern area objects, like buildings, with multiple addresses, and then one have to use extra address nodes. But for a single node object with a single address that's not an issue.

... but in case of one building with one single housenumber and MORE than on POI (shop, amenity etc) it might be better to set an extra note for the addr: tags, or when you have the area of that building, add addr: to the whole building with single POIs inbound the building.
