I was wondering if there were any decent apps that anyone knew about that would allow me to either edit areas and upload the edits later (when I have internet access) or to place map notes and then upload later. I have iOS 6 and can't update (it's an older device). I would really like to be able to add notes to a route while I'm traveling so I don't have to keep track of a paper list and have trouble finding exactly what location I was talking about before.

I do not have an iOS device, however...

you may find one by trying/reading specs from this list https://wiki.openstreetmap.org/wiki/Apple_iOS#OpenStreetMap_editing_features

If you just want to make notes on geographical places and have a map display see https://wiki.openstreetmap.org/wiki/Apple_iOS#Track_making_features and sort for "geo-tagged notes" (or photos). Many map apps support that. While I am saying "photos" – as far as I know the standard Apple camera app saves your current location into a photo's meta info, so maybe just taking photos would be enough for you.
