Hello Is it possible to generate reduced maps in OpenStreetMap that include only streets and no other objects? If I reduce manually the Pdf file, it works with small cities. But with Paris for example, the file is to big to handle with. See attached picture (reduced manually). Thanks!

Yes, you can download the data for Paris, then load it in a rendering engine like Maperitive (also see Wiki article) where you can decide what gets drawn and what not by editing a style sheet. It is not something you can do by simply clicking a few buttons but Maperitive is reasonably well documented and if you are comfortable editing a text file then it should work for you.

To download data, go to the export tab and choose "OpenStreetMap XML" as your output format. If you want to download an area larger than the export tab allows, check out XAPI or download a planet extract. You can use the Osmosis program to extract subsections of a planet extract if you need it.

Sorry, I don't understand it. How can I import the OpenStreetMap Xml film to Maperitive? Or what commands I need to delete all objects apart from background and streets? I don't understand the manual.

See the Maperitive article on the Wiki for a better introduction. Note that you don't delete the non-roads; you just change the style sheet to show only the roads.
