Cobblestones together with paving_stones in lanes as an pavement what kind of tag ?

As far as I can see there’s no surface tag for an old carriage track, with left and right cobblestones and paving_stones in between. The earliest situation was solely pavement in the middle to give a horse some sturdiness. Has anyone ever tagged some like it and if so how ? Or should I just choose either one ?

This is a rather common situation with tracks, even if not necessarily in this combination. In previous discussions about this topic, people have suggested a surface:middle=* key for the surface in between. At the time of writing, it has about 1000 uses mostly in and around Germany, so it isn't established or anything, but it fits your situation perfectly.

So my tagging recommendation is:

surface        = cobblestone
surface:middle = paving_stones
