Hi

I'd like to document a journey completed thru the UK showing actual routes and highlight places enroute etc to publish in a book I am intending to write and get published. Can I use the openstreetmaps as an original source without infringing any copyrights as long as I credit openstreetmap as the source?

Yes, you can. See the Legal FAQ on the wiki for details of how to credit OpenStreetMap.

Bear in mind, though, that your altered maps (i.e. OSM with your route and anything else superimposed) also have to be released under the same Creative Commons licence. This means anyone else is free to copy them.

This is something you can quickly find if you use the "search" tool on this help tool (see on top of your screen) with "publish book" for instance.
