Are you asking about the "iD" editor (the default web-based editor that appears when you click "edit" if you're not using Internet Explorer)?
The relevant tag would seem to be either shop=fishmonger (proper shop name, 2.1K uses in taginfo) or shop=seafood (recommened by the wiki, but less common at 1.7K uses, and not the everyday word used to describe such shops, at least here in the UK).
