Any recommendations for providers that enable the manipulation of font size at different scales? We are generating map prints on www.caerusgeo.com and find that font size and iconography are absolutely essential to readability of the maps. I don't believe that Mapbox offers that level of cartographic control presently, but do others?

Mapbox does allow you to tune design down to font level. They are the main contributors to Tilemill, which gives you access to pretty much all of mapnik's map rendering features. Just upload a style created with Tilemil instead of using one of the tunable preset maps.

Other providers certainly do give you full crontrol over map styling too, but I'm not up to speed with them. Try the wiki for a list of osm map providers, or even build your own server.
