Why is Madrid Metro shown as an Railway and not a subway?

It does appear that railway=subway (despite this being very American English) is the standard means for tagging urban railways, particular ones which predominantly run underground.

I would suggest that you contact the Spanish OSM community on talk-es, and/or add a Note close to a relevant feature. Someone may then respond by re-tagging it.
