Why is there no live editing in Potlatch Two and iD?

Because to implement it would be insanely complex, especially with a full-featured undo system. The tiny number of people who find it important don't merit the resources required.

Or to give another perspective: live editing is scarily dangerous, and I am glad it's (almost) gone.

I realized the danger but I am a responsible man, and experienced enough for live editing. My choice is always live editing in Potlatch One. And I am ready for live editing without undo support.

Sorry - there simply aren't enough people like you to make it worthwhile coding the feature. You could of course code it yourself, but I doubt it'd be deployed on osm.org.
