I recently found out about OSM and want to help build the map for my area. I own a Sony GPS-CS1 and an iPhone 4.

What is the best way to log the roads I drive then upload that to OSM to ensure the roads are there and in the right place.

If a part of my trace already exists, will it simply be ignore by your system?

Uploading traces and Editing the map are two different things as far as OSM is concerned. So uploading a trace won't affect the map directly (you need to edit the map to add new roads), and also it's possible to add roads to the map using alternative sources of data such as aerial imagery.

It's probably best to read the two pages I've linked to in order to get a better understanding of the differences.
