I know that the tag emergency=fire_hydrant exists.

But are they not indicated on the map?

I have tried to search for fire hydrant, but only some objects with the name fire hydrant and the category fountain show up (somewhere in Canada).

The main map on openstreetmap.org can't possibly show everything that exists in the database, but there are many services that use osm data to represent something specific. For example Fire Hydrants map is made specially for fire hydrants and other emergency features.

For this very reason I got into rendering the OSM data with Maperitive for custom Fire Service Maps.
