I am looking for a simple way to map static maps for my website, something that I can update occassionally withouth having to re-enter all of the POIs, any suggestions?

Try the "export" feature on the main site. Any of the popular photo editors have support for layers. When you want to update the image, download the new image with the same paramiters and just swap the background layer.

Remember to release the map (with the POI layer) under CC-BY-SA and attribute OSM with “© OpenStreetMap contributors, CC-BY-SA”
