How can I tag a crossing / pedestrian crossing as friendly for wheelchairs?

You may tag a wheelchair friendly way with wheelchair=yes.

To specifically tag kerb heights at pedestrian crossings, you could also consider the proposed kerb key. The rationale for using not just wheelchair=yes here is that this information has potential applications beyond wheelchair routing. For example, blind people are also affected by kerb heights.
