Rettungspunkte (highway=emergeny_access_point) are important points for everyone who is walking, cycling or working outside the cities. So it would be important that they are rendered on the maps usually used by those people.

How can I activate the rendering in the default mapnik map?

I think nobody would disagree with your statement "So it would be important that they are rendered on the maps usually used by those people".

However why do you believe that the "default mapnik map" is the "map usually used by those people".

If you mean you want to see them rendered on osm.org you have to ask the admins there. You can do so by opening an new ticket for mapnik marked as enhancement here.

PS: I'd assume people going outdoor would use matching maps, e.g. wanderreitkarte, hikebikemap or 4umaps. (overread that part of your question first)
