what do people think is the best software to handle and play with .osm files in Apple Mac?

Almost all open source software avalable for linux is also avalable for mac and windows.

What software is best to handle osm data depends a lot what you want to do to the data. You find a comparison of different software on the wiki.

Thanks. Do you mind if I amplify? I don't want to get into serious map contributions, but I do want to do elementary editing on OSM layers. I'm used to Illustrator, but life seems to get complicated (and sometime expensive) at that level (exporting, translating, etc etc) ... any advice?

For elementary editing, use the Potlach editor on the website. If you're flash-deprived, use JOSM or one of the various single-purpose apps (depending on what type of editing you want to do). If you want to "draw on top of the map" rather than edit the map, just export to svg or png and use your favorite image editor.
