i have tried to tag an area of land used as a plant nursery by typing in landuse plant nursery but plant nursery does not list after typing in landuse which does list, hope that makes sence, as still very much new at this, any help appreciated.

You can use any tags you like. So even if it isn't listed in your GUI feel free to type it by hand. You can search at Taginfo if you wonder how well used a certain tag is.

To tag a plant nursery, the tagging landuse=plant_nursery (wiki page) seems a reasonably established practise. You may also add additional information as specified on the wiki page. landuse=plant_nursery is currently not rendered by osm's main rendering engine but, a feature request has been submitted.
