Why is there a sign for veterinarian but not for medical doctor?

Is your question related to the icon being available directly when mapping in Potlach or to which icons are rendered on the map?

I don't think there's any particular reason.

If you feel that there should be a sign for medical doctors, post a feature request to https://trac.openstreetmap.org/ ( Set Component=potlatch2 ). You can log in with your OSM account.
