I find it very inconvenient that there's no stand-alone "pizzeria" sign in the "shopping" (or "food & drinks") category!

A pizzeria can be tagged with the cuisine-key: http://wiki.openstreetmap.org/wiki/Cuisine

amenity=restaurant or amenity=fast_food

cuisine=pizza

The wiki-site also suggest to use oven=wood_fired if it applies (don't know, if this is much used, though).

There is not enough room to have a icon for every POI out there. Therefore the different variations of say resturants or fast food shops are grouped together in a single icon.

If you do not like this you can deploy your own instance of Potlatch 2 on your own website and change this.
