I guess you refer to the Potlatch2 (aka 'P2') editor icons. Those are predefined tags easy to handle but OSM is much more. Also the online map you see on the main page is only rendering a part of the data.
About your question, go to the main page www.openstreetmap.org, click on 'documentation', then 'Map Features' on the left pane, then you arrive here. On this wiki page, we collect the most popular and used tags (although you are free to use your own values). You will find the veterinary in the 'amenity/healthcare' section. You will also find many 'shop' values.
Once you know which tag to use, go back to the map editor. In P2, use the 'Advanced' mode (the tab at the left pane when you create the node), then type in the key/value you found in the Map Features. For all features, you can add tons of information like the shop/vet name, phone, web site, etc, and anything you want to see later on that POI.
