Can someone point me to the file where setting for "boundary=protected area" and its fellow tags like "protect id" and "protection class" is? I guess it will be somewhere at http://trac.openstreetmap.org/browser/applications/rendering/mapnik/?

There is currently no rule for boundary=protected_area or protection_class or protection_id. This does not mean that there won't be any in the future though. There is a general rule to display names on areas for high zoom levels, maybe you are after that?
