Most (if not all) receipts have the address for the shop on them. Are we allowed to use this data to set address info in OSM?

Yes, I don't see why not. Buying something at a shop would count as "original research" in my eyes ;)

My guess is that almost all shopkeepers have a vested interest in having their marketing attributes tagged in OSM even if they have never heard of OSM.

In case of doubt, you can still ask the shop owner if he/she has any objections to appearing on a map. I am sure they will not say no, and maybe you will even recieve a free drink or coupon out of gratefulness ;)

BTW, if it is an official publication by the shop, I would consider the address-data as "please come again and recommend us to all your friends", therefore publishing their address to a bigger audience is explicitely desired. It is like a business card, the address info on their official homepage or in their e-mail signature.

Addresses from commercial listings like "yellow pages" might require more care.

But beware... Some really clever businesspeople running highly successful enterprises sometimes spell their address incorrectly e.g. in their e-mail signature. This usually results in a big facepalm to me.

The recipies themselves I would consider copyrighted unless otherwise stated. :)
