How can i create a new category "AccesibleWalksInTown" for disabled people and add in there the special routes?

I am interested in creating touristic routes that are easy to follow people with physical dissabilities, using wheelchairs (routes that do not include stairs etc )for my town Thessaloniki, Greece .

please help me how do to that with specific steps for me to follow . I wish to offer this to the community with physical dissabilities .

The wheelchair routing project certainly looks like a good place to start. Another example worth checking is wheelmap; they seem to have an active comunity even outside of OSM. Tag the ways accordingly (wheelchair, surface, incline, steps, etc) and an existing routing engine with a wheelchair setting will be able to use the data.

First try contacting one of those projects to see if they can be used for your goals. Help them by tagging, testing, or even working on that new feature you need. Of course you could also start your own website from scratch (search the wiki to get started installing the stack) but it's easyer and safer if you can piggy-back an established project.

Standard practice in OpenStreetMap is only to add routes that are already waymarked by an external body. OSM is not a site for sharing your favourite routes and recmomending them to others.

If the routes that you'd like to add are indeed waymarked, have a look at the Route relations page on the OSM wiki for how to map them.

If not, you might like to look at a third-party site that uses OSM data, such as MapMyTracks.

Can i make a project similar to that for my town ? how can someone start a project like that?

You mix calculated routes (from 'A' to 'B') and pre-defined routes declared in OSM db with relations. For the first, you need a routing engine supporting the accessibility tags. For the second, you shouldn't create your own routes in OSM db if they are not waymarked.
