Is there a table on the wiki comparing tagwatch, tagstat, osmdoc and similar services ?

You should probably just use the new Taginfo at taginfo.openstreetmap.de . It is the most comprehensive of these kind of services and offers almost all the features of any of the other services. I am not aware of any comparison of those services, but what matters most is your personal taste anyway. If any of those services does what you need, then thats the service you should use.
